WESTERN SPRINGS, IL – The owner of an upcoming wine bottle shop in Western Springs wants to "demystify the world of wine."
Aron Dorner, a former London resident who now lives in Western Springs, revealed the goal in his business plan.
The Clever Drinker is planned for 4354 Johnson Ave. It will replace The Opry cocktail bar, which closed in April after a tough few weeks.
The business plan was released publicly Thursday as part of Clever Drinker's application for a liquor license. The documents were included in the agenda for Tuesday's Liquor Commission meeting.
The Clever Drinker aims to grow its client base through retail sales, a subscription program, concierge servies and partnerships with local businesses and participation in local events.
The business plans to keep The Opry's interior largely the same.
Dorner has a deep appreciation of classic European wines and the global wine scene, according to the business plan.
"The Clever Drinker removes the intimidation factor by providing thoughtful curation and personal guidance, whether a customer is buying a single bottle, joining our club or planning a milestone event," the business plan states.
The Clever Drinker doesn't plan to prepare food on site, but hopes to team up with other local busineses to offer customers small snack-like food options such as meats, cheeses and crackers.
Patch left a message for comment with Dorner on Thursday on when he hopes to open the business.
