PLEASE NOTE, I HALVED THE RECIPE. I AM GIVING YOU THE HALVED AMOUNTS.
Also, please line your cupcakes with white liners as it enhances the appearance of a little beer. I used yellow and it kind of worked, but they didn’t get as translucent as the white would. Also, preheat your oven to 375.
1. Mix your drys (1 ¼ c. flour, ¼ tsp. salt, and 1 ¼ tsp. baking powder).
2. Beat your butter (6 tbs. That is ½ of ¾ c. here is a handy dandy chart to help you… http://www.asknumbers.com/CupToTablespoon.aspx) until it is fluffy and then cream in that sugar (1/2 c. plus 6 tbs.).
3. Add your eggs one at a time. I halved my recipe. Look at the ingredients, you need 3 eggs. WHAT SHOULD I DO KATIE? Well, you have two options. Option 1, put your 3 eggs into a liquid measuring cup and then scramble them up with a fork. Pour half into the bowl. Or you could put in a whole egg and the yolk from a second egg. I would suggest the second approach because you use whites for the frosting.
4. Add your food coloring (1 drop red, 5 drops yellow), orange zest (1/4 tsp.) and vanilla (1/2 tsp.)
5. Mix the Blue Moon beer (1/2 c.) and milk (2 tbs.) ad ½ the flour mix, the milk, and the rest of the flour mix. Pop quiz! Why do we do that? YOU SHOULD REMEMBER . Mix it up until just combined.

6. Fill your muffin tins 2/3 full and bake those babies for 18 minutes. Take them out and let them cool.
7. Make your frosting. This frosting is the most delicious I have ever eaten. It is light, fluffy, and delicious.
8. Mix ½ c. sugar, about 5 tbsp. of water, and 1/8 tsp. cream of tarter in a saucepan. Heat it until the sugar is dissolved and the mixture is bubbling slightly.
MEANWHILE
Put your 1 egg white, ½ tsp. vanilla, and ½ tbsp. orange juice in a bowl and mix it until soft peaks form. What the hell is a soft peak? Don’t you worry, I will totally tell you. Or rather the woman on this video will. http://www.raleys.com/www/videos.jsp?videoid=1116298 This is a great video to help you with beating egg whites.
9. Slowly add the liquid mixture beating constantly. Beat until stiff peaks form (like 7 minutes). Didn’t watch that far in the video… here you go http://www.raleys.com/www/videos.jsp?videoid=1116298
10. Frost your cupcakes with a generous dollop of frosting. Eat them. Enjoy.
