Did I Hear Someone Say Strawberries?

Light, refreshing, strawberry bruschetta?

Strawberry bruschetta, that is? Now I've got your attention, don't I?

After last week's "hot" wave, I wanted to make an appetizer that was light and refreshing for our girls birthday celebration. I decided since strawberries were on sale, I would try a strawberry bruschetta. It was wonderful.


2 cups of diced strawberries
1 log of goat cheese
Honey to drizzle
Fresh basil
3 Sweet and Low packets
Strawberry balsamic vinegar (available at our very own ) or Balsamic vinegar
Olive oil
French bread

  • Slice French bread into eight slieces.
  • Brush with olive oil, bake at 400 till crisp.
  • Toss strawberries, with sweet and low packets, chopped basil and balsamic vinegar.
  • Spread goat cheese on bread crisps, drizzle honey over goat cheese, top with strawberries and basil. Enjoy!
