Leftover Dilemmas!
Leftovers, what to do? Cook it in a new way, and the family will never know!
Growing up Italian, it was important you always had enough food to share, meaning if that bus of people pulled up in front of your house on Sunday around dinner time, you could feed them all.
Well, since there is only myself and my husband, I find I need to use my leftovers, instead of throwing them out. Since this was just a holiday weekend, you may have cooked out barbecue chicken, or pork on the grill and wondering how many times you can feed your husband and kids the same meal before they make you walk the plank.
Here are a few ways to use up your leftover chicken or pork.

Pulled Meat (chicken or pork)

2 1/2 cups Ketchup
1/4 cup of brown sugar
1/4 cup of chopped onion
2 TBS Worschetshire sauce
1 teaspoon of garlic paste (or garlic powder)
1 teaspoon of hot pepper sauce
1/8 teaspoon of red pepper
1/8 teaspoon of black pepper
2 teaspoons of liquid smoke
- You will need your crockpot. Place either chicken or pork in your crockpot and place on low.
- Mix ingredients in a bowl and pour over your chicken or pork. Cook for 6-8 hrs, shred your leftover chicken/pork with a fork, serve on a bun.
*If you want extra sauce to pour on top of sandwich, then double this recipe.
Fried Rice
Serves 4
8 oz of leftover cooked chicken or pork (chop, tenderloin, roast)
2 cups of cooked brown or white rice
1 cup of green peas
1 can of sliced water chestnuts
1/2 lb of green beans
1/2 cup of green onions
Egg beaters scrambled (equivelant of 1 egg)
2 TBS of sesame or vegetable oil
2 TBS of low sodium soy sauce
Fresh basil to taste
Pepper to taste
- Cook rice according to directions and in a small saute pan, scramble egg beaters. Heat oil in saute pan or wok
- Add onions, water chestnuts, and green beans to oil. Saute until soft. Add cooked rice, pork, scrambled egg, peas, and soy sauce.
- Saute for 3-5 minutes until pork is heated through, add basil and pepper, saute until basil is wilted.
- Enjoy!

Leftover Chicken or Pork
1 can of Enchilada Sauce
1 pkg of taco seasoning
Taco Shells
Lettuce, Tomatoes, Onions
Salsa
Guacamole
Sour Cream
- You will need your crockpot for this. Place chicken or pork into crockpot with some Chicken or Beef broth to cover meat, and add Enchilada Sauce.
- Cook on high for 4 hours, shred meat before serving in a large bowl.
- Serve with all the fixings for a taco bar.
- Enjoy!
