Learn to Preserve Foods

U of I Extension educator to share guidelines of safe canning.

Wouldn’t it be nice to enjoy your garden or farmers market produce all year long? Whether just starting out or updating your food preservation knowledge, join University of Illinois Extension Educator Laura Barr for one of several upcoming seasonal programs throughout DuPage, Kane and Kendall Counties.

“Canning is a simple, smart way to make the most of the fresh produce available this time of year,” Barr said. “Food preservation is on the comeback trail, with people wanting to support local economies, grow their own food or enjoy the taste of summer in the cold of winter. It is important to know the latest scientific updates on the canning process, as we preserve, serve and share our foods.”

The focus on evidenced-based practice and scientific principles is the mission of U of I Extension, said Barr. During a “Yes, You Can: Preserving Safely” session, you will receive the latest, most up-to-date food preservation information, and be able get your dial gauge pressure canner tested for accuracy.

“If you have a dial gauge pressure canner you need to get it tested once a year,” Barr added.

There are six choices throughout June for the “Yes, You Can: Preserving Safely” presentation. The dates and locations are as follows:

· In Kane County, two programs are open for registration on Thursday, June 11. The first from 10 a.m. to noon, and the second from 6 to 8 p.m. The Kane County Extension Office is located at 535 S. Randall Road, St. Charles.

· In DuPage County, programs are open for registration on Tuesday, June 23, 10 a.m. to noon, or Monday, June 29 from 6 to 8 p.m. The DuPage County Extension Office is located at 1100 E. Warrenville Road, Naperville.

· In Kendall County, programs are open for registration on Wednesday, June 17 from 10 a.m. to noon, or that evening from 6 to 8 p.m. The Kendall County Extension Office is located at 7775B Illinois Route 47, Yorkville.

To register, visit us online after May 5 at web.extension.illinois.edu/dkk. There is a $10 fee, which will cover the educational session and pressure canner gauge testing. Minimum class enrollment is 10 with a maximum of 30 participants in each session. Registration closes two weeks prior to each class. If you need a reasonable accommodation to participate, please notify at least two weeks prior to the date of the event.
