Shannon Marie McCoy, age 55, of Grand Island, NE, passed away at her home on Sunday, March 8, 2026. Shannon was born in Joliet, IL, on August 17, 1970, the daughter of the late Stanley and Nancy (Burosh) Mayfield.

Shannon met Steve McCoy in Joliet where they were united in marriage. They soon moved to Grand Island, Nebraska where they raised their two children.
She was employed by McCoy Transfer, where she managed the books and helped with the routes as needed.

Shannon was a member of Calvary Lutheran Church in Grand Island for several years. She had many hobbies including watching Cubs games, playing darts, rock music, and reading anything she could. Above all, she loved spending time with her granddaughters. Shannon loved taking the girls to the nail salon, shopping trips, and any outings she thought they might enjoy! She also enjoyed making the Thanksgiving meal with Skyelyn.
Those left to cherish her memory include her children, Stephen “Steve” McCoy of Grand Island, and Amber (Matthew) Fleming of Omaha; her granddaughters, Layla, Skyelyn, Kenzy, and Elayna Fleming; the father of her children, Stephen “Steve” McCoy of Grand Island; and her sister, Tami (David) Jackson of Joliet, Illinois. She is also survived by several aunts, uncles, cousins, nieces and nephews.
She was preceded in death by her parents; grandparents; aunt, Georganne Underwood; uncle, George Burosh; and cousin, Mike Underwood.
A celebration of life service will be held at 3:30 p.m. on Saturday, March 14, 2026, at Calvary Lutheran Church, 1304 N Custer Ave., Grand Island, NE 68803. Pastor Sheri Lobdel will officiate. A visitation will be held from 5:00 to 7:00 P.M. on Friday, March 13, 2026, at All Faiths Funeral Home, 2929 South Locust Street, Grand Island, NE 68801.
