Cooking something up....

Something to cook up!

Those who know me know I love to cook, not sure when it started.  Might have been when I was young, my parents both worked and my sister and I were latch key kids.  Mom would call us and give us some things to do to get dinner started, chop veggies or get the water going for pasta etc.  Might even have been my Grandmas both of them were great cooks, had to be growing up during the depression they cooked….. Everyone did, and they were very good at it.  Walking through the kitchen as a kid smelling all the wonderful food we were going to eat. 

 

However it started my family has always been very happy I love to cook.  Most things are simple but tasty, today I want to share a favorite, London Broil this past weekend was cold/rainy/windy so I cooked indoors.

For this you need;

Olive Oil- about ½ C

Lemon juice 1-2 Tbls

Red Wine ½ C

Garlic cloves 3-4 smashed and chopped

Salt and pepper to taste

1 ½ -2 pound flank steak

 

In a large zip lock bag (the large gallon size will work).  Mix the lemon juice, olive oil, wine, garlic, salt and pepper.  Ease the flank steak in to the bag, get as much of the air out as you can so the steak is covered and seal the bag.  Massage the sauce into the meat and let it marinate for a few hours, the longer the better. 

Drain the flank steak and pat it dry.  Place under preheated broiler for 10 minutes per side until well browned.  Put it on the cutting board and let it rest for 5 min or so.

 

While it is cooking make a batch of rice, season the water or better yet use beef broth to make the rice.  Toss in celery, carrots onion, after it comes to a boil put in the rice and add frozen peas or corn. 

Cut the steak against the grain and serve over the rice, save any leftovers for sandwiches (if there are any leftovers).  Serves 5-6
