Nebraska Woman Conquers 5-Pound Sandwich in Less Than 8 Minutes

A Nebraska woman gobbled down the Jethro's Adam Emmenecker Challenge Wednesday for a third time -- this victory at the Waukee location.

Molly Schuyler, of Bellevue, NE, is trying to beat the challenge at each of the four Jethro's restaurants in the Des Moines metro. So far she is the only woman to successfully complete the challenge, reports KCCI.com.

Schuyler has eaten the monster sandwich at Jethro’s locations in Des Moines and Ankeny, the Des Moines Register reported. She ate one of those in 7 minutes and 39 seconds, missing the record by nine seconds, the newspaper said.

Schuyler is the sole woman to complete the challenge, which must be done in 15 minutes, the Register said. Only nine people have done it once, and one man has done it twice. “Man Vs. Food” host Adam Richman couldn’t do it.

Wednesday was her third go at eating the 4-pound sandwich and 1 pound of fries -- this time at Jethro’s BBQ ’n Jambalaya in Waukee. The challenge must be completed in 15 minutes for the sandwich to be free.

The Adam Emmenecker Challenge includes five pounds of sandwich and fries featuring a huge pork tenderloin, Angus steak burger, slabs of Texas brisket, applewood bacon and fried cheese, finished with buffalo chicken tenders. The sandwich is topped with melted cheddar cheese, and white cheddar sauce, topped with a spicy pickle.

Schuyler completed the challenge in just 7 minutes and 53 seconds, KCCI reports.

Schuyler is 5-foot-7, 120 pounds. The 33-year-old mother of four told the newspaper she typically drinks about a gallon of water, diet soda or other liquids a day.

After she conquered the Emmeneckers in late December and early January, Jethro’s owner Bruce Gerleman asked Schuyler to try his other locations.

Next she plans to stop by the Altoona location of Jethro's on Friday to make it a four-peat.

Each Jethro’s location in the Des Moines metro has barbecue and a special theme. The barbecue and Jambalaya is unique to Waukee’s Jethro’s -- which is technically in West Des Moines but billed as the business' Waukee location.
