Paleo Pumpkin Almond Breakfast Bread…Yum!

Whoever decided that eating a high sugar, grain and milk laden breakfast was a good idea, should be shot.

Does anyone really feel well after eating such?

The sugar spikes your blood sugar, the “grain” has few health benefits because it is so processed, and the milk is gas producing.  So basically you walk around in the morning tooting with a yucky belly and then crashing after the sugar high.

This is not the way I want to start my day, so I made this bread on Sunday and it was a hit for my daughter and me.  It has no grains or dairy, but it is filled with good plant fat and healthy, vitamin filled fruit, which will not spike your blood sugar and will give you lasting satiety.

I’ve been toasting a generous piece in the morning for our breakfast and it is not only quick and portable (eating in the car on the way to the bus is normal), but it has kept us full for hours.

Paleo Pumpkin Almond Breakfast Bread

1 cup pumpkin puree

1 ½ cups almond butter

2 very ripe bananas

3 large eggs

¼ cup organic coconut oil

1 ½ teaspoon baking powder

½ teaspoon baking soda

2 teaspoons pure vanilla extract

1 teaspoon cinnamon

1 teaspoon ground ginger

½ teaspoon nutmeg

¼ teaspoon cloves

Combine all ingredients and mix with an electric hand mixer for 1 minute.  Grease an 8×8 glass dish with coconut oil.  Bake at 350 for 30 minutes or until knife comes out clean.
