Black Bean Taco Salad

I put together this super-quick salad with romaine lettuce from my garden.

Text message: "Lisa, you gotta come over. I must have about 50 heads of lettuce in the garden. Come with the kids and get some." 

Tania, my garden-savvy friend, and I started our "community" garden last summer. I just love watching how the vegetables and fruits grow. It even seems like this happens overnight. The best part is experimenting with the foods each season and coming up with fun recipes.

So I had a lot of romaine lettuce and decided to make a taco salad.  It took me about five minutes to prepare for today's lunch.

Toss about 2 cups of shredded romaine lettuce, 1/2 cup canned black beans (rinsed), 1/2 chopped avocado, and throw on a dollop of salsa.  You can also top with a few crumbled tortilla chips (I didn't have any in the pantry, but it is a nice add-on).
