Strawberry Oat Bars~No Baking Involved!

Here's an easy and delicious recipe for Strawberry Oat Bars adapted from Whole Living Magazine.

'Tis the season! Summer. Ahhh. Summer.

This is the time of year to take advantage of all the fresh berries and fruit now abundant at farmer's markets, gardens, and at natural food stores.

Even though strawberries are pretty much gone for the season, there is no excuse not to make these oat bars. And the best part is that you don't even need to use the oven!

I saw this recipe in Whole Living magazine and just had to make these tasty treats. (In fact I devoured them immediately! Luckily I got some pics for you first!) 

Packed with lots of fiber and very low in sodium, these bars are super healthy. You can boycott the stove for these!  This means no fuss, no time, and easy peasy.

Strawberry Oat Bars (modified from Whole Living)

Makes 6

1 1/2 cup pitted dates

1/4 cup almond slices

2 Tbsp rolled oats

Pinch of sea salt

1 cup of strawberries, hulled and thinly sliced

Pulse the dates, nuts, oats, and salt in a food processor until combined.

Press the date mixture into the bottom of a 9 x 5 inch loaf pan. 

Mash half the strawberries and spread on top of date mixture.

Top with remaining strawberries. Slice into rectangles.
