Trip to Farmers Market (and Chard with Roasted Beets and Sweet Peas)

Took a trip to the Fresh Farm Market and picked up some chard for this recipe: Swiss Chard with Roasted Golden Beets and Sweet Peas.

When I think of summer, I think of trips to the local farmers markets.

Each Sunday I choose different markets to visit. Each one has their own personality with  farmers providing their speciality. Peas, cucumbers, yogurt, berries, and even baked goods. (Check out those brownies!)

Last  Sunday, I took the kiddos to the Fresh Market at City Dock downtown. It is a cute little market with tons of delicious veggies, fruits (although I heard the strawberries are OVER; not a good season this year), breads, dairy, and meat.

I picked up some beautiful chard to make this recipe from Terry Walters, Clean Food. This cookbook is my ultimate favorite, plus Terry is a graduate from my school, the Institute of Integrative Nutriton. Gotta support!

Swiss Chard with Beets and Peas

Serves 6 (and can serve over lentils or couscous)

Ingredients:

3-4 golden beets

2 Tbs. EVOO

1 sweet onion, diced

3 bunches of chard

1 cup of fresh peas (or frozen)

Sea salt

Freshly ground black pepper

Preheat oven to 425 degrees F.

Wrap beets loosely in foil, place in baking dish and bake 45 minutes. Remove from oven and set aside. When cool enough to touch, open foil and gently peel away skins. Cut beets into bitesize pieces.

In a large skillet over medium heat, saute onion in EVOO about 3 minutes. Add chard and toss gently until it starts to wilt. Add beets and peas and saute another minute. Remove from heat and season to taste with salt and pepper. Serve warm.
