Homemade Guacamole Recipe with Grilled Corn

I'm all about a good appetizer and when avocados are in season this one can't be beat. The addition of grilled corn to this guacamole recipe is a fun addition which makes this guacamole stand out.

I'm all about a good appetizer and when avocados are in season this one can't be beat.  I like the addition of grilled corn to my guacamole because not only does it let me use my grill but I love the taste of grilled corn.  So find some fresh avocados, some local corn (from Vince’s Produce Stand if you live near Ferndale), and check this recipe out!

Ingredients:

  • 4 Avocados (make sure they are soft to the touch)
  • Cilantro (1/2 of a bunch, chopped leaves)
  • Juice from 1 lime
  • 2-3 T Franks Hot Sauce
  • 1/2 Onion, diced
  • 3 Cloves of Garlic, Diced
  • Grilled Corn (see:  How to Grill Corn)
  • 1/2 Tomato, Diced

To begin chop up the onion, garlic, tomato and fresh cilantro leaves.  Next, use a knife and cut the corn off the cob.

Opening an avocado can be tricky if you haven't done it before.  Don’t fret; it’s not that hard.  Use a knife and cut it into two halves.  There is a hard round seed in the center which you will feel with the knife.  Once you have two halves of avocado tap the sharp knife right into the round seed and twist clockwise.  Be careful not to cut your hand.  This will release the seed without damaging the fresh avocado.  Then use a teaspoon to carefully scoop out the avocado and put it into a bowl. 

The next step is to add all the remaining ingredients into the bowl and then add the hot sauce and lime juice.  Mix it up to your desired consistency and serve with some tortilla chips.  Pretty easy for an amazing appetizer!
