Fox Hollow Opens on Route 40

New coffee shop also has a drive-through.

Fox Hollow is not your average coffee shop. In fact, it is an expresso bar.

The beans are a blend from seven countries, roasted each week on Monday off-site, then brought to Fox Hollow, where staff grinds, presses and brews them.

“People know everything is definitely fresh,” co-owner Dave Knee told Patch.

The drink menu is extensive, with customer favorites so far including snow fox latte and caramel machiatto. Seasonal selections are available too, like pumpkin spice latte, pumpkin cheesecake latte and pumpkin pie latte. Come the holidays, peppermint and eggnog lattes will be added.

Knee, who relocated from New Jersey to open Fox Hollow in late September, is a sous chef by trade specializing in sauces, soups and sautee. His paninis have been the biggest hit at Fox Hollow, as well as his soups.

“I’m going to have to start making double,” Knee said. In the three weeks since opening, he’s made chicken noodle, minestrone and Italian wedding soup that have all sold out. Soon, he will make chili as well.

There are breakfast and lunch items on the menu, from bagels and muffins to salads and sandwiches, which are served all day. Knee, who is in the process of getting his marinara sauce patented, also changes his specials menu daily, with two dishes and a soup. 

Fox Hollow has a drive-through window and several tables for sit-down dining. There is wireless in the café offered free to those with Xfinity accounts.

“People are saying, ‘Oh wow, you have wifi?’ And they go right back out to their car and get the computer,” Knee said.

In addition to the newly opened Fox Hollow off Route 40, there are two others—one in North East and another in Elkton—but Knee said it is by no means a franchise.

“It’s a mom-and-pop shop," Knee said. He and his co-owner are the two full-time staff at Fox Hollow, and they have one part-time helper.

“Hopefully, its going to be a hit" in Havre de Grace, Knee said. "I think it will be once people get to know we’re here."

Fox Hollow is at 2107 Pulaski Hwy. in Havre de Grace. Hours are 6 a.m. to 7 p.m., Monday to Friday. Hours vary on weekends.
