Andover Inn, Samuel’s Doing 'Boston Bakes for Breast Cancer'

The Andover Inn and Samuel’s Restaurant will be participating in the 15th Annual Boston Bakes for Breast Cancer from May 5 – 11, the 3rd consecutive year the hotel has taken part in this important charity event. Executive Chef Paul Dubuque and his culinary team will designate the sale of their “Fresh Berries with Sabayon and Chantilly Cream” during Boston Bakes week to the Dana-Farber Cancer Institute and Bakes for Breast Cancer, Inc., a non-profit breast cancer organization dedicated to making a difference.

“We’re proud to support Boston Bakes again this year, and to give our guests the opportunity to enjoy a delectable dessert prepared by Chef Paul while supporting breast cancer research at the same time,” commented Stephan Amesoeder, General Manager for the Andover Inn.

Andover Inn and Samuel’s Restaurant will join more than 200 restaurants, supermarkets, bakeries, cafés, chocolate and ice cream shops throughout Massachusetts participating in this year’s Boston Bakes for Breast Cancer.

Recipe for Fresh Berries with Sabayon and Chantilly Cream (2 servings)

Ingredients:
5 oz. seasonal berries (cut to size)
2 egg yolks
1 oz. Marsala wine
1 tsp. sugar
½ oz. white wine
¼ cup whipped cream
½ tsp. sugar
A dash of Grand Marnier
Mint leaf (optional)

Directions:
Wash and dry berries, cut to size and place in two champagne glasses. Keep cool.

To make the Sabayon, in a double boiler, place egg yolks, 1 full teaspoon of sugar, Marsala wine and white wine. Whisk constantly until foamy. Put aside.

Fold 1/2 teaspoon of sugar and Grand Marnier into whipped cream to form the Chantilly Cream. Pour the Sabayon over the seasonal berries and top with Chantilly Cream. Garnish with mint leaf (optional) and serve at once.
