Cinco de Mayo Fiesta: Make Your Own Tacos Bar

One fun way to celebrate is to set up a taco bar for dinner on Tuesday. Don't forget the chips and salsa!

Think guacamole, margaritas, tacos and mariachi music - Tuesday is Cinco de Mayo.

“Cinco de Mayo—or the fifth of May—commemorates the Mexican army’s 1862 victory over France at the Battle of Puebla during the Franco-Mexican War (1861-1867). A relatively minor holiday in Mexico, in the United States Cinco de Mayo has evolved into a celebration of Mexican culture and heritage, particularly in areas with large Mexican-American populations. Cinco de Mayo traditions include parades, mariachi music performances and street festivals in cities and towns across Mexico and the United States.” -- History.com

Make Your Own Tacos Bar

  • Choose your favorite ground or shredded beef, chicken, pork, fish or roasted vegetables for the taco filling. Season with a packaged taco seasoning, or a combination of chili powder and cumin.
  • Shredded cheddar or Mexican-style cheese
  • Refried beans or black beans
  • Mexican rice
  • Sour cream
  • Finely shredded lettuce or cabbage slaw
  • Guacamole
  • Pico de gallo or salsa
  • Soft tortillas or hard-shell taco shells
  • Pickled jalapenos or pickled onions

Warm soft tortillas wrapped in foil and hard shells for a few minutes in a 350-degree oven.

If you like, serve margaritas, cold Mexican beer or Mexican sodas with the tacos.
