caramelized crust of the canelés may have originated from Bordeaux, but
now they are famous all over France, with many Parisian pastry shops
selling them.
Some recipes don't carry a tale but the canelé carries many and this
is part of the legend. During the class, the instructor Yolène Adande
will shed some light on the origins of canelés. She will provide a
recipe and demonstrate the necessary gestures to guarantee creating the
perfect canelés! It is important to note that canelés are famously
tricky to make.
After learning about their background, the tasting begins! You'll
bite into a crunchy caramelized crust and discover a soft vanilla and
rum scented custard inside.

About the Instructor
Yolène Adande is obsessed with food and especially sweets.
After eight moves, two countries, five cities, and three kids over
the course of the last 12 years, she decided to change her career. She
enrolled in the pastry program at the French Pastry School of Chicago
where the teachers were pastry world champions or MOF (Meilleur Ouvrier
de France / Best Craftsmen of France), and they were all passionate and
amazing professionals.
She graduated in December 2012 and then worked for Chef Jen Templeton at the Gingersnap Sweets and Such bakery in Chicago.
She is excited to be following her dream and looks forward to what is in store for her here in Boston.
