Mothers Day Pear And Blueberry Baked Pancake

What's better for dinner than...breakfast?
Years ago, I used to make a baked pancake with apples. At the time my children were small and I was just finding my way around the kitchen. I never would have dreamed of altering the ingredients in any way, until now. After a few moments of digging through my trusty Betty Crocker Tin, I located the relic.
Feeling adventurous, I decided against using the apples the recipe called for, opting instead to use what I had on hand: Bosch pears and fresh blueberries. The combination was so delicious, I had to share this out for Mothers Day; it's a great go-to dish, suitable for breakfast, brunch or dinner, and so easy you wont even notice spending those few minutes in the kitchen.

The best thing about this baked pancake is it's so easy to make, kids will be able to really help with putting it all together.
The topping options are endless: you could try cinnamon and sugar, maple syrup or a light dusting of confectioners sugar; nuts, sprinkles, more fresh fruit-whatever your hearts desire.
We went all out with a tower of (no sugar!) whipped cream and slivered almonds, and of course once the kids saw the whipped cream they were all in!

Pear And Blueberry Baked Pancake
Ingredients
- 3 eggs
- 1 1/4 c. milk (lowfat)
- 1 1/2 c. flour
- 1/4 tsp. salt
- 3 T. melted butter
- 2 small pears, sliced thinly
- handful of blueberries
*Preheat oven to 400 degrees. Pour butter into 9x12 casserole dish and turn dish to ensure bottom is uniformly coated. In a large mixing bowl, beat eggs and add milk. Beat on low for two minutes until combined. Add flour and salt to egg mixture and beat until smooth. Pour pancake batter into casserole dish, and top with thinly sliced pears and dot with berries. Bake for 35 minutes, take out of oven and let cool for 10 minutes before slicing. Top with your choice of topping and serve.
