Mandarin Chef

No major violations were found during the inspection but the following notes were made:

• Dry goods near three-door cooler not labeled, dirty covers. Covers cleaned during the inspection.
• Pans (white plastic containers) in downstairs prep area not clean to sight and evidence of improper air drying (containers wet, excess water, and nesting). Was found to be corrected at an inspection on Nov. 7
• Ice machine slight amount of debris/grime. Able to be removed by alcohol swab, maintain clean.
• Sink three-bay (downstairs prep) - 200ppm - Revise instruction.
• Discard wrapped cutting board in downstairs prep area.
• Sanitizer too strong in downstairs three-bay.
• Clean downstairs prep ceiling.
