INGREDIENTS:
1lb of dayboat fresh Yellowtail or Black back flounder, fluke, or Grey sole
1 red or orange bell pepper. Washed seeded, de-ribbed, & small dice( the smaller the better on dicing all ingredients)

1 jalapeno pepper seeded & de-ribbed small dice
1/2 red onion small diced

1 bunch scallions sliced
3 limes juiced
1 orange juiced
3 tbl spoons of Agave or honey
1/2 bunch of cilantro diced
1 tbl spoon of chili paste( optional)
Mix all ingredients together. Let sit for up to an hour to let flavors combine.
Serve with tortillas or popcorn or crunchy bread.
