One of the things I love best about summer is the abundance of fresh fruit and vegetables, and all of the colors and flavors that come out of my kitchen each night. I often make a big salad for dinner, and when I first started doing that, the boys in my house would scream "where's the meat!". We've taken to eating meatless meals pretty frequently now, so they're pretty used to dinner salads. But I've also realized that in order for a salad to be an entire meal, it has to be full of different flavors, textures, and most importantly, protein.
This California Power Salad features quinoa, pecans and sunflower seeds for protein, as well as some of my favorite "always in season in California" fruits (strawberries, watermelon and avocados) and greens. It's the kind of salad I can eat anytime when I'm out west, and I really love it when I can easily find all of the ingredients here in the summer.
