Spice up your Weekend!

Need to make a salad for a weekend picnic or barbecue? Refresh your traditional salads with cilantro.

Looking to add another level of flavor to your summer salads? Try cilantro! Cilantro is the leafy part of an herb whose seeds are known as coriander. Because of its appearance, cilantro is also commonly known as Chinese or Mexican parsley.

I’m going to try it in my recipe for red cabbage salad with a honey-lime dressing:

  • Clean, and then chop, slice or julienne one small red cabbage (about 5 cups).
  • Dice or slice about one half cup onion (yellow, red or green)
  • Clean and chop about a cup of cilantro, removing the stems.
  • Whisk together - 3 Tbsp lime juice, 2 Tbsp honey, 1 tsp cumin, and a pinch of salt (to taste).
  • Pour the lime-honey dressing over the slaw mixture, gently toss, cover and refrigerate to allow the flavors to mingle before serving.

You can alter this recipe to your liking. Depending on how you like your slaws, chopping, slicing or dicing your vegetables is up to you. You can also make it easier by using a pre-chopped, bagged coleslaw mix. And for additional color and sweetness, try adding orange slices or a small can of mandarin oranges.

There are a number of other ways to use cilantro including dressings, marinades, and it's especially good in chili, salsa and soup, including gazpacho!
