Recipe of the Week | Butternut Squash Fritters

This week Jillian makes brunch worthy butternut squash fritters.

Who doesn't love fritters? While we all know about the more traditional American fritters, such as corn and apple, butternut squash is a hearty vegetable that is abundant in our area and excellent when prepared in fritter form. Grating the butternut squash can be arduous, but don't give up... it gets easier from there!

Begin by peeling and grating one butternut squash, set aside the grated butternut squash in a bowl and gather the following ingredients.

INGREDIENTS:

1 tsp cumin

1/4 tsp ground nutmeg

pinch salt 

1/4 cup of flour 

2 eggs

1/4 cup shredded sharp cheddar cheese

1/4 cup chopped scallions

DIRECTIONS:

Beat the two eggs and add them along with the sharp cheddar cheese, cumin, nutmeg, salt and flour to your grated butternut squash. 

Heat up a frying pan with extra virgin olive oil, and scoop 1/2 cup of your butternut batter into the pan.

Flip when golden brown, each side should take about 3 minutes.
