Marlborough Favorite Mexican Restaurant Plans To Expand
A popular eatery with locations in Marlborough and Hudson announced it will open a third location.
SOUTHBOROUGH, MA — A popular Mexican restaurant with locations in Marlborough and Hudson announced its plans to expand to Southborough.
Lalo's Mexican Restaurant is expected open at 154 Turnpike Rd. in Southborough. The eatery's owners, husband and wife Vanessa Ceja and Gerardo Guzman, went before the Southborough Select Board on Jan. 6 to request a Common Victualer's license.
The Select Board unanimously approved that request. “I am glad you’re doing this,” said Southborough Select Board member Kathryn Cook. "This town needs more restaurants so we are fully supportive of what you’re trying to do."

Lalo's will open at the former site of Hola Restaurant & Tequila Bar. The 1,495-square-foot building will host the new restaurant, which will feature two entrances, a kitchen, and a bar. An attorney representing Ceja and Guzman said the couple plans to keep the building's structure the same but add some upgrades.
Lalo's currently operates a location at 460 Lincoln St. in Marlborough and another location at 158 Main St. in Hudson.
