Zucchini Boats on the Grill

  • 2 medium zucchini
  • 1 slice white bread, torn into small pieces
  • 1/4 cup bacon bits
  • 1 tablespoon minced black olives
  • 1 jalapeno pepper, minced
  • 3 tablespoons diced green chile peppers
  • 1/4 cup minced onion
  • 1/4 cup chopped tomato
  • 6 tablespoons shredded sharp Cheddar cheese
  • 1 pinch dried basil
  • seasoned salt to taste
  • ground black pepper to taste
  1. Prepare the grill for indirect heat.
  2. Place the zucchini in a pot with enough water to cover. Bring to a boil, and cook 5 minutes. Drain, cool, and cut in half lengthwise. Scoop out the pulp to about 1/4 inch from the skin. Chop pulp.
  3. In a bowl, mix the zucchini pulp, bread pieces, bacon bits, olives, jalapeno, green chile peppers, onion, tomato, and Cheddar cheese. Season with basil, seasoned salt, and pepper.
  4. Stuff the zucchini halves with the pulp mixture. Seal each stuffed half in aluminum foil.
  5. Place foil packets on the prepared grill over indirect heat. Cook 15 to 20 minutes, until tender.

Green Beans With Hazelnuts and Lemon

  • 1 1/2 pounds fresh green beans, washed and trimmed
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons lemon zest
  • 1/3 cup chopped toasted hazelnuts
  • salt and pepper to taste
  1. In a large pot of salted boiling water, cook beans 3 to 8 minutes or until tender. Drain and place in a large bowl.
  2. Add olive oil, lemon zest, hazelnuts, salt and pepper. Beans may be made 1 day ahead, chilled and covered. Reheat beans, preferably in a microwave

Plum Blueberry Upside Down Cake

  • 1 1/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3 tablespoons margarine
  • 1/4 cup brown sugar
  • 1/3 cup margarine
  • 1 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3/4 cup milk
  • 4 black plums, pitted and thinly sliced
  • 3/4 cup blueberries
  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch cake pan. Combine the flour, baking powder and salt. Set aside.
  2. In the prepared pan, combine 3 tablespoons margarine and brown sugar. Place pan inside the preheated oven until the margarine melts and begins to bubble. Set aside. In a large bowl, cream together the 1/3 cup margarine and 1 cup white sugar until light and fluffy. Beat in the egg, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated.
  3. Arrange plums around the edges of the prepared pan, overlapping slightly. Distribute the blueberries in the center. Pour batter into prepared pan, covering fruit completely. Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool 15 minutes before serving.
