New Horizons cooks up a winning combination

Scratch kitchen prepares more than 1,200 meals daily with new co-executive chefs

MARLBOROUGH, September 12, 2014 – New Horizons at Marlborough senior living community recently announced a change to the leadership of its culinary staff. Framingham resident Marcreires “Marcos” DeOliveira, a long-time employee, has been promoted to co-executive chef, along with new hire and Johnson & Wales University alumnus Raymond Forse of Marlborough.

Bob O’Connor, executive director of the not-for-profit independent and assisted living community since before its opening in 1994, said the change came about during the search for a new food services director.

“Marcos has been with us for nine years and has a proven track record of resident satisfaction, while Ray came to us with a strong culinary background and dietary management experience in the field of long-term care,” explained O’Connor. “We ultimately decided that creating co-executive chefs was the best way to meet the needs of our kitchen and our residents.”

DeOliveira has risen steadily in the ranks since joining the retirement community in 2005 as a cook. The early risers at The Meadows, the independent living section of New Horizons, recently wrote a note to management commending him on the “unfailing courtesy, efficiency, and competency” with which he manages the breakfast venue. “It is always service with a smile and a personal greeting,” they wrote.

Forse, a food service veteran, joins New Horizons after nine years as dining services director at Golden Living Center in West Newton, Mass.

“I am very excited to be part of the team at New Horizons, and I look forward to providing an outstanding dining experience to all our residents,” Forse said.

“High-quality home-cooked meals are a hallmark of New Horizons, and we are confident that under Marcos’ and Ray’s leadership we will continue to provide our residents with the fine dining experience they have come to expect,” said O’Connor.

Together, DeOliveira and Forse will lead the 18 staff members who prepare 1,200 meals a day from scratch. In honor of New Horizons’ 20th anniversary on September 30, this culinary team will prepare an elegant dinner complete with passed hors d’oeuvres. Residents will be invited to wear formal attire, and the event will feature a harpist.

To mark this milestone anniversary, New Horizons recently announced a five-year “rate freeze” on the basic monthly service fee for current residents. The 40-acre country campus, located at 400 Hemenway Street, is home to approximately 450 seniors residing in either independent or assisted living settings.
