And the beet goes on... Craving root vegetables

By the end of a four month treck around Southeast Asia, the three things I missed the most about winter on the Island were my family, the ocean and root vegetables.

As good as a fresh mango, or a simple bowl of rice is, winter just screams root vegetables for me!

Roasted beet salad, roasted radishes, homemade sweet potato fries or a soup mixing them all together!

Try cutting beets up and roasting them in a 400 degree oven for about half an hour drizzled with olive oil, salt and pepper - delicious on salad greens with feta or goat cheese and toasted walnuts!

(Or just keep them in the fridge to snack on!)
