
I've always favored waffles over pancakes, but these are pretty great! Traditional toppings on pancakes in my house are blueberries, strawberries, banana&walnut.. But adding a sprinkling of fresh corn off the cob (yes, I know its not in season, so I can only imagine how good these will taste in August!) and drizzled with fresh, warm maple syrup was such a good rainy morning treat!
3 eggs, 1 cup whole wheat flour, 1 teaspoon baking powder, 1/2 cup almond milk and a pinch of salt. Add the egg yolks, flour, baking powder, milk and salt together.. In a separate bowl, whip egg whites until they form still peaks (this makes the pancakes yummy and fluffy- if you don't want fluffy pancakes, disregard this step). Fold in the egg whites, drop the batter in a pan, sprinkle your corn on top, flip, and serve warm with syrup!
