
A rain day in the gardens inspired me to get into the kitchen and try whipping up something new - energy bars! Perfect for throwing into your lunchbox or purse on the go- and these no-bake bars take no-time at all!
In a food processor, pulse together:
1 cup almonds

1/2 cup medjool dates (about 6 dates)
1 Tbs. Maca power- (great for increasing energy, digestion and stamina)

3 Tbs. Coconut Oil
1/2 cup shredded coconut
2 Tbs. peanut butter or almond butter
2 Tbs. vanilla extract
1 tsp. sea salt
*1/4 cup cacao nibs (or chocolate chips)
Once all ingredients are mixed, pack in a baking pan and let sit in the refrigerator for an our or two, to set the bars. *Try them with any ingredients - nuts, seeds, dried fruits - the possibilities are endless!
