Simple Spring Dinner

Kale, Sweet potato & black bean deliciousness!

Channeling Scottish Bakehouse, where I gather most of my cooking inspiration from, I whipped up chipotle sweet potato mash (sweet potatoes, butter and chipotle powder), kale sauteed with coconut oil* and garlic and black beans- seasoned with cinnamon* and cumin. This is one of my absoulte favorite, not to mention simplest meals- so warm and homey.

*Coconut oil is an amazing oil for our bodies- full of lauric acid which claims to help our bodies fight against viruses and bacteria- also great for hair, skin, weight loss and boosting our immune systems. Good for our insides and outsides, what could be better!

*I don't have a lot of will-power when it comes to cinnamon. The smell instantly takes me back to baking oatmeal-raisin cookies with my parents! Cinnamon is great for balancing our blood sugar levels (great news for diabetics), lovering cholesterol!
