Veggie Tales

The life and times of a vegetarian.

Being a vegetarian, the question, ‘How do you get enough protein?’ seems to always fit into conversations.

The answer: beans, sprouts, tempe, eggs…

Fortunately, there are plenty of foods us veg heads can eat that are packed with protein. Something we have a harder time finding is the essential vitamin called Biotin. Biotin is necessary for skin health, proper fat production, luscious hair, boosting metabolism and controlling our nervous systems.

Biotin also improves glucose levels, making it an important vitamin for those with type 2 diabetes. For the carnivores out there, fear not- biotin is mainly found in animal products! For the vegetarians, we have to find it in other sources, including eggs (most is stored in the yolk), avocados, tomatoes, cauliflower, carrots and cheese.

One of my favorite (and conveniently biotin-packed) meat substitutes is tempe. A tempe scramble with broccoli, carrots, avocado and sprouts can fit perfectly in a wrap for a quick breakfast, or for dining out-a breakfast sandwich with fakin’ bacon is quite a treat any time of the day!
