Rainy Day Pizza

Warm and Toasty Pizza for a Rainy Day

I used to teach cooking classes at Newton Community Education, but due to travel and family, I have had to put that on hold. 

On a grey chilly day and I want something warm and comforting. Pizza!!! But, I want to settle into a good book, not leave the house, or eat delivery Pizza that is soggy and chewy by the time it arrives. If that describes you today, here’s one of my fast and easy favorite rainy day recipes:

 Ingredients:

  • Pizza dough, homemade or store bought that has been left at room temperature for an hour.
  • Pizza sauce or fresh tomatoes
  • Shredded mozzarella
  • Parmesan
  • Garlic powered, oregano
  • Whatever toppings you like onions, ham, pepperoncini, mushrooms etc.…
  • Olive oil spray

 

Have all ingredients opened, and lined up ready to grab and throw on the pizza. Also, be very careful, a very hot heavy iron skillet can be dangerous if not handled properly.

 Directions:

  1. Heat oven to 500 degrees WITH a cast iron skillet in it
  2. While the skillet is heating prep ingreddients, Cut dough in half,
  3. After 20 minutes take the skillet out of the oven, spray with olive oil and stretch out one piece of dough so it will cover the bottom of the skillet.
  4. Place dough in bottom of skillet and adjust as need (use wooden spoons)
  5. Add sauce, cheeses, and toppings
  6. Place skillet back in oven at 500 for 12 -15 minutes; depending on how well done you like your pizza and how crispy you like you’re crusty.
  7. Take out of the oven; remove with a flat spatula and let cool for a couple of minutes on a wire rack.
  8. Repeat with the other piece of dough.

 Enjoy awesome crispy pizza made to your specifications at a fraction of the price with out leaving the house!
