My next subject was an easy one to pick… since the inception of Silver Tie Servers I keep running into the same issues with potential customers:how much help do they actually need to assure their party is one that will be remembered for the good food and beautiful host rather than how overwhelmed the staff was, hence the slow service, and how LONG it took to get a drink at the bar! For every 25 guests, give or take 5, there should be one server to attend to their every whim (would you like another maraschino in that Manhattan, Miss)?
As for Bartending, for every 100 guests you would need no less than two. I had a lady tell me that there were 150 guests attending her wedding and she wanted one bartender only. The beer and wine was all “self serve” and she just needed one person to attend to mixed drinks. She never considered her guests twisting off caps from multiple beers (hard on the hands, let me tell you), proper clean up, opening bottle after bottle of wine or refill services throughout the evening. Without the proper amount of servers, bartending included, tables go unattended, dirty dishes pile up and wine glasses run on empty. The Bride and Groom, in the case of a wedding for example, have painstakingly seen to every detail regarding flowers, food, the perfect cake and that the bridesmaids nail color matches perfectly with their bouquets, but sometimes underestimate the service for their guests, oh no, no!
When all is said and done, and the happy couple is digging their toes in the sand in some Caribbean hot spot, the guests will look back on the wedding, you can bet on that, and what will they remember? Hopefully people will reminisce about the beautiful couple, the delicious food, the great music, Uncle Earl making an ass of himself and…. the service!
