Baked Apples Stuffed With Rosemary Walnuts Lemon Raisins Brown Sugar Spices and More Apples!

I am apparently on dessert duty next week. Which is odd seeing how the entire family knows I am complete crap at baking! See boys and girls yours truly is a “throw everything in no measuring” kind of cook. I let my senses and mood determine the complexity and intensity of a dish. Which is why most of us love to cook ,we can custom make anything to our liking. Unfortunately, most baked items are reminiscent of a chemistry lab project … mixing ,measuring dry ingredients, separating wet ingredients, sifting , to grease or not to grease and god forbid you mix up the baking powder with the baking soda; disaster!! So I was thinking about dishes that are desserts that require none of that nonsense but still have the same end result ..YUMMMY tasty after dinner treats to make any sweet tooth sit down and shut up! Remember those baked apples your mom used to make… simple sweet gussy mushy sugary cinnamon little balls of love!?... well we are going to step it up and stuff those apples with walnuts brown sugar raisins more apples and some lemon juice and rosemary! I have tried this a couple ways I even went so far as taking a pie crust and making a little crisscross situation on top to give it that apple pie feeling but that only resulted in me eating all of the pies crusts off the apples before they made it into the office.. So grab your muffin tins grease them up and start coring some apples! Cheers Dears! 8 Apples (6 scooped out core removed placed cavity side up in grease muffin tin/ 2 apples peeled cored and finely diced) ½ cup brown sugar ½ cup crushed walnuts 2 tbsp melted butter Juice from one Lemon 1tsp fresh rosemary finely diced 1 tbsp Cinnamon ¼ cup golden raisins Preheat oven to 375*. Grease a muffin tin and place a scooped out apple in each hole of the muffin tin. Mix all the other ingredients together in bowl then scoop the mixture into each apple. Bake 30 minutes. p>
