Have you ever prepared a meal and felt proud of yourself, even before your family or friends tasted it?
Today I made a homemade salad from what I could find in my fridge. I roasted a piece of bluefish and combined both to prepare a lunch plate shown in the pictures above.
For the salad, I mixed:

- half a bag of mixed greens
- half an avocado
- One honey crisp apple, cubed
- One tablespoon of roasted red pepper hummus
- diced celery, tomatoes, and onions
- schezuan infused olive oil
- half of a lime juice
I marinated two pieces of fresh bluefish for half an hour in a tomato-based sofrito and lemon-pepper spice. I roasted the fish for 20 minutes at 350 degrees F.
