Join us at the winery for our harvest to sample local New England wines and crush the grapes of Zoll Cellars future vintages. Think like a winemaker as we process the grapes prior to fermentation. Pastry Chef and Vintner, Frank Zoll, will share with you how he hand crafts his wines.
Chilean Cabernet Sauvignon will come in by boat about the last week of May 2012.

Wine making Harvest Crush Classes start with a New England wine tasting paired with savory artesian breads & farm fresh local cheeses. This will be followed by a Zoll Cellars' biodynamic farm tour.
Then it will be up to you to start with sorting of grapes, crushing and de-steming of fruit. After our grapes are crushed, we will analyze and test the juice to make simple corrections to balance the must prior to fermentation.
Tentative Harvest Date June 2nd 2012.
