Each year I challenge myself to eat as local as possible. This can be tough as a working mom but I do my best. Adding to the challenge this year is the fact that I'm pregnant and most meals still cause nausea after eating. Yup - that's right - I get nausea after I eat and well into my 2nd trimester. It's the pits for someone who loves to eat especially at the height of the harvest season.
My midwife suggests protein-heavy meals and avoiding refined carbohydrates so actually this makes my eat local challenge easier to swallow (pun intended!). So, I was excited this past week to make this all local lunch - Chard, Herb and Cheese Omelet with Lettuce and Radish Salad.

- Rainbow Chard: from my Jones Farm CSA (Chelmsford)
- Herb Mix and Garlic Scapes: Jones Farm
- Onion: Dragonfly Farms (Pepperell)
- Local Eggs: Springdell Farms (Littleton)
- Cheddar Cheese: Westriver Creamery (Vermont - bought at Westford Farmers market)
- Lettuce: My backyard (Westford)
- Radishes: Jones Farm
Results: yum! I still felt a little queasy after eating but it sure made me happy going down. In fact, I made 2 additional omelets to bring to work for the rest of the week.
