Great way to celebrate Spring with bright sunny, lemony squares of goodness!

What better way to celebrate Spring than with a light and refreshing dessert. Something different that won't disappoint even the person who loves chocolate. These lemony squares of goodness are always a big hit and so easy to make. Can be made the day before too. Great dessert too with Easter right around the corner.  I decided to deviate from What's for dinner and share a recipe that goes way back to my childhood. My mom made these a lot for parties. It's my mom's famous Lemon Squares.

I tend to make these in the summer months to bring to BBQ's,cookouts, camping and boating.  It's a different dessert that is light and refreshing and a great way to usher in Springtime.

Lemon Squares

Crust:

  • 1 Stick of Butter softened
  • 1 1/3 cup Flour
  • 1/4 cup Sugar

Directions: Combine Crust ingredients, mix on low speed until blended.  Spread crust and pat down into an ungreased 13x9 Pan.  Bake at 350 for 15-20 minutes till crust is golden. Remove and add the filling.

Filling:

  • 1 1/2 Cups Sugar
  • 4 Eggs
  • 4 Tablespoons Flour
  • 1/2 Teaspoon Baking Powder
  • 6 Tablespoons Fresh Lemon Juice or Minutemaid Lemon Juice

Directions: Combine all using a handmixer till thick and foamy, pour over cooked crust. Return to oven and bake for 15-20 minutes longer until brown on the edges. Remove and cool completely. Cut into Squares and dust with Confectiner's sugar and present in cupcake papers to serve.
