What's for Breakfast?: Apple Cinnamon Crepes
Something different for breakfast, sweet apple crepes to go along with any Sunday big breakfast!
Waking up to the smell of bacon on a Sunday morning brings back childhood memories. Who doesn't love that smell. Every now and then I like to make a big Sunday breakfast as it's one of the few times that we are all together. I usually make the traditional pancakes,french toast, belgium waffles, eggs, bacon, sausage and fruit.
Every now and then my daughter likes to make Crepes. So this morning we chose Apple Cinnamon Crepes and that's What's for Breakfast! Also can do a big breakfast at dinner time as well to mix things up during the week.
My daughter is 13 and makes this recipe all the time, it's fast and easy.

Crepe Batter
- 1 Cup Flour
- 2 Eggs
- 1/2 Cup Milk
- 1/2 Cup Water
- 1/4 Tsp Salt
- 2 Tablespoons Melted Butter (let cool as to not curdle the eggs)
Directions: Combine all in a bowl stirring with a whisk. Using a small non stick saute pan, coated with Pam non stick spray, heat till hot. Pour a small amount of the crepe batter (1/4 cup) into the pan and rotate the pan to cover the bottom. Cook for about 1 minute on each side till a little golden and flip to cook the other side, remove. Keep crepe's warm.

Apple Cinnamon Filling
- 4-5 Apples (your choice) peeled, sliced and chopped
- 3-4 Tablespoons of Sugar
- 2-3 Tablespoons of Butter
- Ground Cinnamon and Nutmeg
- Pinch of salt
Tip: When strawberries and Blueberries are in season, we usually make the filling with those fresh berries, but in the fall/winter months, apples take first spot as they are readily available. If you use Strawberries, my daughter loves to coat the inside of the crepe with Nutella Hazelnut spread. Nothing says sweet crepe's like chocolate and strawberries. Topped with a dusting of Confectioners Sugar and Whipped Cream.
Crepe's are very versatile and you can also make them savory and add whatever saute vegetable that you like, zucchini, mushrooms, peppers, tomatoes, spinach and add a little gruyere cheese or cheddar and your good to go.
Directions: Place butter in saute pan, add the apples, pinch of salt sugar, cinnamon and nutmeg. Option: add the following: Golden Raisin, Raisins, Walnuts etc.
Saute till softened about 10 mins. Remove and fill the inside of the crepe with the warm apples and cinnamon, roll up and serve with confectioners sugar and whipped cream. Can be dusted to with cinnamom as well. Hope you enjoy!
