What's for Dessert?

Moist, rich apple cake that goes great with coffee, tea and friends.

Now that apple picking season is over I'm sure like me, you've got a lot of apples sitting in a bin in the fridge taking up space past their prime.  When that happens to me I either make apple sauce, saute the apples down to put in crepe's or chop them up and cook them to put in a stuffing for pork tenderloin. 

One of my favorite cakes to make with left over apples, of any variety, is French Apple Cake.  I wouldn't quite label it a dessert, more like a cake that goes well with tea, coffee and good friends. 

This recipe is my moms and goes way back.  I wish I had the history of the recipe from where she got it if it was her own, but I don't. I suppose I could ask some of her friends who might have had it or got the recipe from her. All I know is I have the one recipe card in my box and treasure it.

As I was going through my recipe box I came across it and couldn't understand why I hadn't made it in almost 15 yrs. The last time I did, I gave it to a brand new neighbor, who raved about it.  I also think, if you look at the ingredients, it screams fattening. But every now and then you need to indulge, put blinders on and enjoy what tastes really good. Just take a walk after you eat it. 

I'll let you know now, it's not the prettiest looking cake at all, not a show stopper, but a moist, delicious cake with tons of flavor. I usually dust each slice with confectioner's sugar before I serve it, but you don't have to. You can't just eat a sliver of it, you'll keep going back for a bigger piece. It makes a lot as it's prepared in a tube pan, and I usually give about 1/3 of the cake away so I don't eat the whole thing.

It's French Apple Cake and that's what's for Dessert!

Mom's French Apple Cake

Dry Ingredients:

3 Cups Flour

1/2 tsp Salt

1 Tablespoon Baking Soda

3 Teaspoons Cinnamon

3 Eggs

2 Cups Sugar

1 Cup Oil

2 Teaspoons Vanilla

3 Cups peeled and chopped apples

1 Cup Chopped Walnuts

Directions: In a large bowl, sift dry ingredients together, then add in the chopped apples and nuts, coat all and set aside.

In a separate bowl, beat eggs one at a time into sugar until smooth. Add oil and vanilla beat well.  Mix the wet into the dry ingredients.  (The Batter will be thick).

Pour into a greased or sprayed with Pam Tube Pan at 350 degree's for 1 hour and 15 mins till toothpick or skewer inserted comes out clean. Cool completely. Turn cake out onto a plate, dust top with confectioners sugar or each slice, it takes away the ugly!
