What's for Dinner?: Beef Stir Fry

Quick and easy Beef Stir Fry for those nights that are really busy.

One of my all time favorite go to recipes is Beef or Chicken Stir Fry. It’s quick and easy and a no brainer when you want fast!  With all my kids sports/activities and running around this dish comes in really handy.  Tonight it’s Beef Stir Fry with White Rice, Salad and that’s What’s for dinner.

Quick and easy and little prep work and can all be prepared the night before. You can slice up your vegetables and place them in a Ziploc bag. Slice your meat and place in another Ziploc bag and your marinating ingredients in a separate container. You don’t need another vegetable due to all the veggies in the stir fry. 

What better way to end a meal in the fall is with one of my favorites Apple Crisp.  My friend Maureen gave me this recipe when we were Junior’s in High School and I still use this recipe till this day and we are still best friends till this day! It’s a keeper.  Add some vanilla ice cream and what better way to end a meal!

Beef Stir Fry

  • 1 ¾ lbs of Flank Steak or Skirt Steak cut on the bias (angle against the grain)
  • 1 Sliced Thin Red Pepper
  • 1 Medium Vidalia Sweet Onion slice thin
  • 1 Can drained sliced water chestnuts
  • 1 Fresh Head of Broccoli cut into pieces
  • 3 Cloves Garlic sliced
  • ½ Tsp Chinese Five Spice Powder (if you don’t have it you can omit it or add garlic powder/onion powder some cayenne if you’d like) Adjust to your likings.
  • 1tsp Grated Fresh Ginger or powdered
  • Whisk the following in a bowl
  • 1 Can Beef Broth
  • 3 Tablespoons cornstarch
  • 2 Tablespoons Soy Sauce
  • 2 Tablespoons ketchup

  • Edamame (thawed) ½ a bag (can be omitted if you don’t like Edamame)
  • Olive Oil

Tip: You can add whatever vegetables you like, not just what I put up there.  Add Carrots, zucchini or summer squash, green beans, asparagus pieces, bean sprouts, bamboo shoots, mushrooms. I use whatever I have in my fridge or canned in my panty. You don’t have to follow the recipe to the T.

Directions:  I season the beef with salt and pepper and stir fry in hot oil till almost cooked completely through. Remove from pan and keep warm.

Add oil and stir fry the veggies for about 10 mins till wilted but still crisp.  Add the 5 spice powder if you have it.  Add the liquid (broth, soy, cornstarch ketchup-whisk) and pour over veggies till the sauce thickens.  Add the beef back into the pan along with the thawed Edamame.  Cook till heated through and serve over your favorite rice, white or brown rice goes great with this dish. 

Mo’s Apple Crisp

  • 6 Cups Apples
  • 6 Tablespoons Sugar
  • ¼ Tsp Cinnamon

Mix together and place in a pie plate, rectangular pan, any baking dish

Combine the topping:

¾ Cup flour

1/3 Cup soft butter ( 5 1/3 tablespoons)

6 Tbsp Sugar

½ Teaspoon Salt

Mix together, place on top of apples and Bake at 350 for 40 minutes
