What's for Dinner?: Citrus Marinated Grilled Pork Tenderloin

Tender juicy marinated Pork Tenderloin

One of the few things that I do right is Pork, whether it’s a roast, tenderloin, shredded for sandwiches or chops.  Just love cooking pork, always comes out moist and delicious.

Love this recipe as you can prepare and make the marinade the day before with the pork. Love to grill in the summer time, but even in the fall, we have some great summer like days.  Its Citrus Marinated Grilled Pork Tenderloin and it’s What’s for dinner. Add  warm apple compote, couscous, green beans and salad and you’ve got a complete meal.

Citrus Marinade:

  • About 2lbs pork tenderloin
  • Juice and zest of 2 Lemon (use more if the fruit is small)
  • Juice and zest of 2 Lime (use more if the fruit is small)
  • 4-5 Cloves Garlic minced/crushed
  • Minced Cilantro
  • ¼ cup Dijon Mustard
  • Olive Oil/Canola Oil about ¼ cup
  • Kosher salt & pepper

Tip: Let meat sit at room temperature for 1 hour before placing on a hot grill. Also if you only have lemons use them or if you only have limes, the juice both combined is great but if you only have 1, that will work as well.

I usually serve this with my warm apple compote or jarred applesauce, but the homemade is so much better.

Fresh Apple compote for the Pork:

  • 1 Apple peeled and diced (any kind of apple)
  • 1 small chopped onion
  • 2 cloves garlic minced
  • ¼ cup chopped dates
  • dash cinnamon &  dash dried sage
  • 3 T sugar
  • kosher salt &  black pepper
  • 2 T butter

Sauté and then add about ½ cup water and reduce down till apples are soft.  Adjust seasoning if need be. It’s a great alternative to jarred applesauce and doesn’t’ take a lot of time. Again, prep it in the morning and refrigerate till dinner.

That’s what’s for dinner and I hope you enjoy!
