What's for Dinner?: Pasta with Peas and Spinach
Pasta and a cream sauce, what's not to love!

Do you ever run out of idea’s for dinner? I know I do. When I do and don’t really feel like cooking, I turn to pasta. It’s my comfort food. After all the over indulgences of Christmas Eve and Christmas Day dinner, I wanted something quick, easy and hearty without a lot of work. School vacation is a vacation for me to not really cook and when I do I want it simple and easy. Pasta with Peas and Spinach and that is What’s for Dinner. I had my sisters leftover veggie stuffed peppers (from a prior blog weeks ago) and some Italian Bread and I’m good to go. Tossed salad too will work as well.

1 lb Rotini Pasta, cooked and drained and set some of the pasta water aside to thin the sauce.
3 Large garlic cloves diced

Olive Oil
Red Pepper Flakes
Kosher Salt and Black Pepper
3 T prepared Pesto Sauce
3-4T sundried tomatoes in oil
½ box or bag of frozen peas
½ box or bag of frozen spinach-Cook, drain thoroughly
1/4cup to ½ cup Romano/Parmesan Cheese (whatever you have)
½ cup to 1cup of half and half or heavy cream or light cream, whatever you have
Directions: In a large sauté pan, add the olive oil, garlic and red pepper flakes. Cook for a few minutes, add the frozen peas, sundried tomatoes, salt and pepper and pesto. Add the drained spinach and heat all through. Add in your cream/half and half and bring to a boil. Stir in about ¼ cup of the cheese.
Pour over pasta and if the sauce is too thick, cut it with the reserved pasta water and stir. Add cheese on top and your good to go. Hope you enjoy!
