Love this time of year. I’m hosting Thanksgiving this year and always have the traditional fare. But the days leading up to Thanksgiving can be hectic and I try not to have chicken and like to make something that is quick and easy as I know come Wednesday, I’ll spend the entire day in the kitchen preparing for Thursday’s feast!!!
Here is a recipe that by no means gourmet. Not a big fan of using soups to cook with but when you want fast and delicious, this is the recipe. It can be made the night before and baked the day you want it. I love this recipe as it’s all pantry
ready items.
I’ve been making this recipe now for over 23 years. It’s one of the first recipes I made when we first got married. It doesn’t get old and it’s an old standby. It’s Hamburger Corn Casserole and that’s What’s for Dinner. Throw in a tossed salad and vegetable and your good to go.

Hamburger Corn Casserole
1 Package of Broad Egg Noodles, cooked, drained

1-2lbsGround Beef
1 Onion Chopped
1 Can Cream of Mushroom Soup (undiluted)
1 Can Cream of Chicken Soup (undiluted)
1 Can Corn (drained)
1 Cup Sour Cream
2 T Butter Melted
½ Cup of Seasoned Breadcrumbs
Directions: In large saute pan sauté the onions and the ground beef till no longer pink. Add the soups, the corn and sour cream. Heat through. Add the cooked noodles and turn out into a casserole dish. Melt the butter and add the bread crumbs and place on top of casserole. Bake 350 for 40 mins or till golden brown. Nothing is easier and tastier and faster than this recipe.

Happy Thanksgiving! Thought I’d share with you a small quick and easy recipe to have, it’s nothing major but to me it’s always been served on turkey day. It’s my mom’s recipe for Cran Orange Relish.
1 Bag Fresh Cranberries
1 or 2 Oranges, skin and all, quartered
Drizzle Grand Marnier (optional)
2/3- 1 Cup Sugar
Directions: Using a food processor, add the berries (fresh or frozen-I prefer frozen, they whirl easier) and whirl together. Remove and add 2/3 cup sugar and a drizzle of Grand Marnier or any Orange Liquor. Stir,place in a sealed container and refrigerate. The next day, remove, taste and if not sweet enough, add more sugar or if too sweet, add more cranberries or oranges.
