What's for Dinner?:Pulled Pork for Sandwiches or a Burrito Bowl
Pulled Pork made two ways that will have your family wanting more!
Here is a recipe that came from my brother in law Rob. Whenever he would have us come to his house for dinner, we always walked into his home with the smell of pork cooking away in the crockpot. Always a crowd pleaser and my kids knew when we went for dinner, this is what he'd make. It's a year round kind of recipe, great to bring to backyard bbq's and let everyone assemble their own sandwich.
It's a crockpot recipe but also can be put in the oven on low at 250 for hours till the meat falls apart. It's Pulled Pork for sandwiches or a Burrito Bowl and that's what's for dinner.
I love this recipe as you can prepare the pork the same way but serve it two separate ways. I love both, it all depends on your mood and what you want for dinner. I usually give my kids the choice, sandwiches or burritto bowls?

It all starts with the homemade BBQ Sauce that can be made the day before or the morning of the day you put it in the crockpot. I prefer to make the BBQ sauce the night before so all I have to do is pour it over the pork and let it go all day.

Use a 2-4lb Boneless or Bone in (the bone adds flavor) Pork Butt or shoulder. Depending on the size of your family and how much leftovers you'd like for the next day. Also some of my friends have made this and they use a pork tenderloin which also works. With a tenderloin I would sear them first then place in the crockpot.
Homemade BBQ Sauce
- 2 T Canola Oil
- 1 Small Onion Chopped
- 6 Cloves Garlic Minced
- 1 T Chilli Powder
- 1 Tsp Black Pepper
- 1 Tsp Liquid Smoke (can substitute Chipotle Adobe Sauce- 2 T)
- 3 T Brown Sugar
- 1 T Worcestershire Sauce
- 1 Cup Ketchup
- 1/4 Cup Vinegar, white or apple cider
Directions: In a small sauce pan, add the oil and saute the onions and garlic till soft, add the remaining ingredients till they come to a boil. At this point you can let it cool, and put it away till your ready to use it.
Pour BBQ sauce over your Pork Shoulder/Butt, and let it go all day long. If you need it quicker, put on high.
Serving it two Ways: The first is simple and easy. Take the pork out and shred it all up and place back in the pot with all the juices. Add to your favorite roll/baguette, top with homemade or store bought Coleslaw and you've got one happy sandwich.
The second way, is probably my favorite: Shred the pork as above, then to a frying pan, coated with a little Canola oil, add a good portion of the pork on the bottom of the pan and press down with a spatula till the pork gets all crispy on the edges, remove and layer your Burrito bowl as follows:
Tip: Make White rice or any rice you'd prefer. I like Cilantro lime Rice and this is what i usually do with the pork.
Bottom layer of Rice, then the Crispy pan fried Pork, shredded cheddar cheese, black beans, salsa or guacamole, sliced green onions/scallions and sour cream on top.
Pair the pulled pork sandwich with baked beans, cornbread and a tossed salad and your good to go.
