Recipes Kids Love to Love

Brighton librarians share easy-to-make recipes from a recent Foods We Love to Love program.

The 14 children who attended the Brighton District Library's Foods We Love to Love program learned to prepare these healthy snacks:

Jungle Juice
This smoothie was a favorite.

1 banana
1 cup frozen strawberries
1 container (6 oz.) vanilla yogurt
2 tablespoons orange juice
1/2 cup blueberries
1/4 cup ice cubes

Place everything in a blender and mix until smooth.

English Muffin Pizza
1/2 of an English muffin
1 teaspoon pizza sauce
3-5 pepperoni
1/4 cup mozzarella cheese

Spread pizza sauce on muffin, sprinkle with pepperoni and mozzarella cheese. Heat at 300 degrees until cheese is melted.

Celery
Peanut Butter
Raisins

Wash celery, spread inside with peanut butter and top with raisins.

Super Snack Wrap

1/2 soft tortilla shell
1 teaspoon low-fat cream cheese
Turkey slices
Shredded carrots
Shredded lettuce
Diced tomato

Lay tortilla flat and spread cream cheese over tortilla surface. Add turkey, shredded carrots and lettuce, and diced tomato. Roll and eat.

Banana Caterpillars

1 banana
2 tablespoons peanut butter
1/4 cup flake coconut
2 raisins
Thin pretzel sticks

Slice banana into 10 slices. Make caterpillar by spreading slices with peanut butter and pressing pieces together. Sprinkle top of caterpillar with coconut and press lightly. Attach raisins to make eyes using a bit of peanut butter. Break pretzel in half and press between banana slices for legs and antennae.
