S'more Cupcakes
A sweet recipe for S'more Cupcakes: Rich chocolate cake and fluffy marshmallow frosting.

Who doesn't love chocolate cupcakes? I personally don't know anyone who dislikes the deliciously sweet mini chocolate cakes. But every now and then we long for a little something different. A twist on the chocolate cupcake we've all grown to love. Well here is your solution. A rich chocolate cupcake accented by the flavors of S'mores, everyone's favorite campfire treat. The frosting is fluffy and sweet with the toasty flavor of marshmallows. And to complete the S'more trio, make sure you top these tiny sweets off with crumbled graham crackers. And in mere minutes you've transformed our classic chocolate cupcake into something new.
Ingredients: Makes 24 mini cupcakes
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 3/4 + 2 tbsp flour
- 1/4 cup + 2 tbsp cocoa powder
- 3/4 tsp baking soda
- 3/4 tsp baking powder
- 1/4 tsp salt
- 1 egg
- 1/2 cup of milk
- 1/4 cup of canola oil
- 1 tsp vanilla
- 1/2 cup boiling water
- In a large bowl sift together dry ingredients (sugar through salt)
- In a small bowl, whisk egg, milk, canola oil & vanilla together
- Pour wet ingredients into dry ingredients and beat with an electric mixer until mixed well
- Stir in boiling water (batter will be very runny)
- Pour batter into 24 mini cupcake liners (or 12 regular sized liners) and bake at 350 for 16 minutes

- 1 cup sugar
- 1/4 teaspoon cream of tartar
- 1/3 cup water
- 1 teaspoon vanilla
- 2 egg whites
Topping:
- 2 graham crackers, crumbled
- 1/4 cup chocolate chips, melted

- Place sugar, cream of tartar, vanilla and water in a large saucepan over medium heat and stir until sugar has dissolved and mixture is boiling
- In a large metal bowl, place egg whites and beat on high until whites are foamy
- Gradually pour sugar syrup into egg whites while continuing to beat on high until soft peaks have formed; this may take up to 10 minutes
- Place frosting in a pastry bag and pipe unto cupcakes; sprinkle with crumbled graham crackers & drizzle with melted chocolate
