Strawberry Lime Breakfast Bread

A healthy breakfast bread featuring fresh strawberries and lime zest

I'm always looking for a delicious way to incorporate healthier ingredients into my baking, but it isn't always easy. It is far easier to just throw in butter, oil & eggs into the batter than to take the time to find healthier, lighter substitutes. Luckily, this recipe is a no brainer. I replaced all purpose flour with whole wheat flour, and it not only made the bread more healthy, but also gave it a nuttier flavor. I then substituted nutrient rich Greek yogurt for the typical butter or oil. The result is an incredibly moist bread that weighs in at under 100 calories per slice. And with the addition of fresh strawberries & lime zest, the flavor is as sweet as some of our more guilty worthy breakfast breads. Enjoy!

Ingredients: Makes 12 servings

  • 1 1/2 cup whole wheat flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup Oikos Strawberry Greek Yogurt
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1/2 cup skim milk
  • 2/3 cup finely diced fresh strawberries
  • zest from 1 lime

  1. In a large bowl, sift flour, salt & baking powder together, set aside
  2. In a medium bowl, whisk yogurt, egg, vanilla extract & milk together
  3. Pour wet ingredients into dry ingredients and stir until just combined
  4. Fold diced strawberries and lime zest into batter
  5. Pour batter into a greased loaf pan and bake at 350 for 40 minutes, or until a toothpick inserted in the center of the loaf comes out clean
