Original Pancake House Light, Fluffy Omelets

Hand-folding and whipping key to signature breakfast food.

This local restaurant item is probably impossible to reproduce in your own kitchen, but we found out the skinny on the enormous omelets from the on Mack Avenue in Grosse Pointe Woods.

One of the most popular restaurants in all the Pointes, the Pancake House is the perfect destination for any meal of the day, whether you opt for a hearty stack of buckwheat pancakes and a side of bacon, the very kid-friendly chocolate chip pancakes with whipped cream, the irresistible crepes of many flavors or the big, puffy and flavorful omelet.

Just by the looks of it, you know there’s something special going on to give this omelet its size and consistency. Unlike its flat “cousin” we cook in our own kitchens, these are plate-fillers in breadth and height. But how do they get them like that?

“Our omelets are whipped, just like a malt is,” said Original Pancake House manager Grace Meier. “You whip them just like you would a meringue.”

The vegetables for the omelets are sautéed in a separate pan, then folded into the whipped egg mixture. Cheese is added and voila, your omelet is ready to cook up. Another secret is that the Original Pancake House folds its omelets over by hand. No special folding omelet pan for them!

Now you can try to make your own fluffy omelet at home. But don’t be too disappointed if it seems to be missing something. That would be the smell of bacon cooking, sausage sizzling, coffee brewing and lots and lots of syrup nearby.
