Tasty Tuesday brings us a yellow salsify, I have been seeing them popping up in the fields around here for the last few weeks!.....................................................

The salsify has a long list of interesting names, including
goat’s beard (which is what the genus name Tragopogon
means), Joseph’s flower (because Joseph had a beard), star of
Jerusalem, and noonflower or go-to-bed-at-noon, because the
flowers close at midday. It’s even been called oyster plant,
because it is cultivated by some for its edible fleshy roots,
which are said to taste a bit like oysters.
